Springtime/Easter!

I am so ready for Spring! And Easter is right around the corner!! I am just now putting touches of Easter around the house!



I love the bright colors of Spring!

I've had so many of you ask to see my new house..well, it needs a little work! Give me time;) I'm just so ready for warmer weather that it makes me excited to think about it!

Here is a glimpse into my living room for all you who asked-

Last night was my Wednesday night to cook at church, and I made this pan of goodness.


I made it on accident a few years ago when making twice baked potatoes. And I get asked for the recipe a lot, but I don't have exact measurements. I'm not a measurer. That's not even a word. Ahem. Anyhow, I'm going to do my best! It's a great Spring potluck dish-and it's not healthy. It is NOT on my clean eating diet before people ask me about it being on my diet! Last night I chopped 10 lbs of potatoes. I think 5 would be fine for potluck.

5 lbs red potatoes, chopped.
1 bag cheddar cheese
1 bag real bacon bits
Green onions, chopped
8 oz cream cheese (use the fat free version)
4 oz sour cream
1/3 cup mayo
1/4 cup buttermilk ranch
6 boiled eggs, chopped

Boil your potatoes in salted water for about 10-12 min. Pour them in serving dish.
Mix together all the bad for you white stuff in seperate bowl.
Place chopped eggs on top of potatoes.
Pour white fattening mixture over the top slowly. Kind of fold it into potatoes until they are covered to your liking.
Pour entire bag of bacon bits on top.
Then cheese.
Sprinkle with green onions.
Refrigerate this goodness for a couple of hours before you eat;)
